I have never owned a mini muffin tray. Always wanted one but didn’t like how the trays are tiny with only 12 holes so you have to buy 2 trays or be stuck baking batches for hours.
Last week I found a big mini muffin tray – 24 holes. Yep, it made me happy! So I bought it and Oscar and I made our favourite muffins when we got home…
Triple Treat Chocolate Muffins
2 1/2 cups self-raising flour
1/2 cup cocoa
3/4 cup sugar
90g butter, melted
1 egg
1 1/3 cup milk
3/4 cup milk choc chips
3/4 cup white choc chips
Combine flour, cocoa and sugar in a large bowl.
Whisk together butter, egg and milk in a separate bowl.
Fold wet ingredients and chocolate chips into dry ingredients. Do not over-mix.
Spoon into greased muffin tin.
Bake in moderate oven for 20 minutes (or for mini muffins, around 12 minutes).
Jaron has gone to Sydney for a few days to help out in the shop. Which has left me home alone with the kiddies.
This morning I was laying in bed while the kids ran around the lounge room, trying to soak up as much lazy time as possible before being hounded by breakfast requests. Oscar came running in saying, “Mum, you should come and see what Lilsy is doing…”
Oh the cheekiness…she cries to play with my pincushion every time she sees it. I haven’t given in yet, and this morning she managed to climb up on a chair, plonk herself down in front of the sewing machine and go to town with the pins! There were no tears – until I took them off her!!
Then, later on I had a shower and this is what I came out to…
Is that not the face of a guilty little “betcha didn’t know I could do this, did ya Mum?!” She had dragged the chair over to the kitchen bench and was getting into all sorts of treasures! There is no stopping her now…nothing is safe. All day long she has been pushing the chairs around so that she can climb up and help herself to anything she pleases on the table and benches. I think the chairs might have to live on top of the table or in another room for awhile. Cute little drawings going on though….
