Make It Perfect

Myth: sponge cakes are hard to make.

They are not, they are actually one of the most easiest cakes around. Require little ingredients and just a bit of time.

My Nan is famous for her sponge. She always has a couple in the freezer to pull out when people come around. Before I was married and still living at home I was lucky enough to spend time with Nan once a week and help her with cleaning and jobs around the house. It was when she lived at her old house in the country and was more able than she is now, but still appreciated a bit of help with vacuuming and washing the floors. When Pop still went to work every day at the river and would drive home with his dog, Sandy on the back of the ute for a hot lunch. They are much older now and much less able. They don’t live in the country anymore and Pop doesn’t go to work. But those memories are still alive.

During one of my visits, Nan requested I do some cooking for her so that she could stock up the freezer with some goodies. It was that day she taught me how to make her world famous sponge cake. And I’m glad she taught me, standing over my shoulder with very definite instructions. If she had just handed me the recipe, it would have failed. I know I would have skipped the part where I was supposed to beat the eggs and sugar for “at least” 10 minutes. It would have been more like 2 or 3 minutes. And I know I wouldn’t have bothered folding the dry ingredients in with a fork. I would have thrown them in and let the beaters do the mixing. And then my sponge would have failed.

Trust me when I say it is easy…as long as you follow the instructions exactly as they are written.

Sponge Cake
3/4 cup castor sugar
4 eggs
3/4 cup cornflour
1 tsp baking powder
3 tsp plain flour

Beat sugar and eggs for at least 10 minutes until very creamy.
Sift together baking powder, cornflour and plain flour. Add to egg mixture and stir with a fork until just combined.
Grease two sandwich tins and divide mixture evenly between the two. Gently tap each tin on the bench.
Bake in a 200 degree celcuis oven for 20 minutes.
When cool, fill with jam and whipped cream.

I’ve been an absent blogger this week. Kids have been sick and grotty. Its been raining and I just haven’t felt like it!

I’ve been getting myself organised to have two new patterns released this month (and they are sooo cute!) and some other exciting Make It Perfect stuff happening…more about that later 🙂

Lil is big all of a sudden. She is acting more like a big girl now, not a baby. Making loud sounds when she wants to get your attention, she can stand up without holding onto anything and applauds herself and giggles every time she does it. I’m sure she will be walking by her birthday. Oscar has finally worked out how to say the “l” sound, he was saying “w” for “l” and now that he has got the hang of it he says all words with L’s in them so articulately, poking his tounge out for emphasis and we HAVE to look every time…”look at my tongue Mum, “LoLLypop!” He is still totally obsessed with puzzles and drawing. He is not really into imaginitive play, doesn’t play make believe with animals or toys much, but will sit and draw pictures all day long – and they look like what he is drawing too! He has learned how to write his name and traces around toys and objects around the house and then fills in the details after he has traced the outline. I think he will be a kid who really loves the structure and organisation of a school classroom.

Anyway, I didn’t plan this post to be talking about the kids and what they are up to…it just happened! I WAS planning on showing you some cool greens that I have been given or found lately…

How adorable are these cupcake pans? Last Saturday we happened to be in Ulverstone and came across a fairly new, very tasty deli. It was in a weird location, out the back of some shops in the middle of a carpark, but we stumbled across it and they have to-die-for selection of deli goodness. Yummy cafe eats and a funky section of homewares. I love green and just had to treat myself to these polka dot cupcake pans. Am thinking they would make for cute first birthday cakes…but its going to be hard to part with them…

And a fun new green measuring tape. Marnie and Denver popped in for a quick visit on their way home from staying with her Mum this afternoon and she gave me a delightful birthday package, this green measuring tape being part of it. (Isn’t it so much fun to get birthday presents 4 months after your birthday!? hehe)

This carrot cake recipe from Linda is delicious! Super moist with the the perfect touch of spice. And who can say no to cream cheese icing…mmmm…

Carrot Cake

1 cup caster sugar
1 cup olive oil
3 eggs
1 1/2 cups plain flour
2 tsp cinnamon
1 tsp bicarb
1 1/2 tsp baking powder
1/2 cup chopped walnuts
2 cups grated carrot

Beat sugar, oil and eggs together with wooden spoon.
Fold in dry ingredients.
Add walnuts and carrot.
Bake at 180 degrees celcius for 45-50 minutes (muffin-sized cupcakes, about 30 minutes).
Ice with cream cheese icing.
I made my icing using 250g cream cheese, softened. Stirred in about 2 cups icing sugar and a tiny squeeze of lemon juice.

.Melly & Me overload.

This is usual for me. I tend to go through a phase of buying lots of sewing/craft stuff and then putting it all away in a box and thinking I will get around to it one day. Then one day come along and I have a sudden urge to empty out the box and make EVERYTHING I have stashed away! So this is the result of my Melly & Me spree of late.

These fish were by far the easiest to make, quick to finish, very cute looking and prefect for using up scraps. So I only have one pattern left to try in my Melly & Me stash…the dinosaur…the problem is, they keep releasing more cute flossies…oh those girls are very clever – and Aussies too!
