Make It Perfect

Recipe Monday

I am on the ball with Recipe Monday this week! This is another favourite Tupperware recipe – sooo yummy and quick and easy to make, great finger food.

Herb Blinis with Cream Cheese and Salmon
1/2 bunch chives, washed and dried
1 cup self raising flour
1 small lemon
125mls milk
2 eggs
1/2 cup sour cream
1/2 cup corn kernels
olive oil
1/4 cup spreadable cream cheese
60g smoked salmon
1/4 cup chives, chopped, extra
rock salt and peppercorns

Finely chop the chives.
Sift the flour into a bowl. Grate the lemon rind and add to the flour.
Place the milk, eggs and 1 tablespoon sour cream into a jug and whisk well. Make a well in the centre of the flour, pour in the egg mixture, then add the corn and chives. Slowly mix to form a smooth batter.
Heat a non-stick frying pan over medium heat and lightly drizzle with 1 tablespoon of oil. Slowly pour about 1-2 tablespoons of batter into the hot fry pan to form small blinis about 4cm in diameter. Cook 1 minute on each side or until the underside is golden. Turn over and cook the other side. Remove the blinis and repeat with the remaining mixture.
Place the cream cheese and remaining sour cream in a small bowl and mix until smooth.
Place a dollop of the cream cheese mixture and a piece of salmon onto each blini, then garnish with chopped chives. Season well with salt and pepper and serve.

**If time permits allow the batter to stand up to 1 hour before cooking.
**Allow the blinis to cool before topping with cream cheese mixture.
**Blinis can be made up to 1 day before serving and stored in an airtight container.
**Makes 20.

a-MAZE-ing Adventure of Tuesday

Our last big day of activities saw us spending the day at Tasmazia just past Sheffield. It is apparently the world’s largest maze and we were stuck in there for hours trying to find our way around and out! It was heaps of fun, Oscar managed to walk almost the whole time without getting tired but had definitely had enough of walking around in circles by the end! It is a great place to take a family as all ages can enjoy it. Within the maze there were about 5 smaller mazes that you had to find your way through, along with a miniature village to explore.
We farewelled the Coward clan on Wednesday. They left on the boat for Melbourne again where they dropped Whitney off at her new house for the next 5 months while she stays behind to finish year 12 and the rest of them headed off to Sydney for a week to spend time with Gemmah and Eve and their families before heading off to the USA next Monday!

Monday’s Magical Moments…

The adventure continues…we were STILL burdened by yucky cold and rainy weather on Monday morning. We were planning on doing the walk into Wineglass Bay today, but the weather was just too yucky and no one was really feeling up to it (well, I wasn’t anyway…in my mind I was trying to psyche myself up for a 3 hour hike into the bay, but my largely pregnant body was telling me otherwise! Plus, the thought of squatting to go to the toilet ever half an hour wasn’t very entertaining either!). So after a yummy breakfast and packing up we drove into Freycinet National Park and decided to take a few of the shorter walks around there. They were lovely, beautiful scenery to look at and nice fresh air to wake us up!

Sunday’s Adventures

I am slowly getting there, recording with our week of adventures!
Whitney and Ashleigh arrived from Melbourne late on Saturday night. Sunday morning we went to church and then headed down to the East Coast for an overnight stay.
We rented out a very nice beach house in Bicheno – it was a lovely place to stay. Great for a family. We will definitely be going back there again sometime. Was quite new and fully equipped. All you really had to take was food and clothes and everything else was there – good beds, a spa, bath and beach towels, pantry staples, boxes of toys and games, porta cot and high chair, books, cds, bbq, sports equipment….it was fantastic. Would have been nice to stay another night or two to really get to enjoy it, but our time was short. The house was only a minutes walk to the beach so when we arrived we went to check it out.
These girls have no fear, after our walk on the beach we visited the Blowhole. Because it was such a windy and rainy day it was going crazy…the waves were HUGE! Whitney and Ashleigh were being dare devils and standing close to the blowhole getting saturated – it was like 7 degrees outside and they were so wet and cold but having a great time!

Saturday’s Snow

They wanted snow, so Jaron found them snow! While Oscar and I stayed home and had a rest, Jaron took his Mum and Dad and Spenser for a drive to Devil’s Gullet to take a nice walk and have a play in the snow. Yep, it was another FREEZING day!!!
A mother’s revenge…I think Julie has been waiting for MANY years to get back at Jaron for all of the grief he caused her growing up!!! And she got him good! Its great to see him getting a bit of his own medicine for once!
