With the camera still out of action 🙁 today’s Recipe Monday photo and recipe comes courtesy of Taste – my favourite place for some cooking inspiration. I did actually make these brownies during the week though – and they were absolutely delightful! I didn’t put as much peanut butter in them as the recipe suggests because I didn’t want it to be too overpowering and I cooked them for a few minutes less than the recipe says also so that they would be moist and chewy and not cake-like.
Peanut Butter and Chocolate Brownies
melted butter, to grease
150g dark chocolate, coarsely chopped
100g butter, chopped
215g (1 cup) caster sugar
75g (1/2 cup) plain flour
2 tbs cocoa powder
2 eggs
200g (3/4 cup) crunchy peanut butter
Preheat oven to 160 degrees Celsius. Brush a 16cm x 26cm slab pan with melted butter to grease. Line base and two long sides with non-stick baking paper, allowing sides to overhang.
Place the chocolate and butter in a large heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir until the chocolate melts and mixture is smooth.
Combine the sugar, flour and cocoa powder in a bowl. Add chocolate mixture and eggs and stir until just combined. Pour into prepared pan. Spoon peanut butter over brownie mixture and use a round-bladed knife to create swirls.
Bake in moderate oven for 35-40 minutes or until crumbs cling to a skewer inserted into the centre. Set aside to cool, cut into slices to serve.A quick recap on our weekend left us waiting in the emergency department at the hospital late on Saturday afternoon with Lil, who had broken out in a huge, red, blistery rash all over her body. She was perfectly happy though, not irritated or upset at all – in fact, she seemed extra hyperactive! Turns out she had some mystery allergenic reaction to “something” and they prescribed her with some phenergan to help it settle down. She still had it yesterday though, it seems to come and go all day long. No signs of it so far today so hopefully thats the end of it and she won’t turn out to be a little girl with allergies!

I’m off to try and have a piece of toast…all of the morning sickness is gone now but for some reason my body can’t tolerate bread until after lunch, it was making me feel really sick. I’m in the mood for a piece of toast with vegemite and a cold milo now though so I’m going to give it a go…
