Make It Perfect

.Recipe Monday.

Last week I was talking with my sister on the phone and she mentioned that her friend had made a delicious passionfruit slice. I happened to have some passionfruit in my fruit bowl (I never usually buy passionfruit, but they were on sale so I picked up a few) and asked her for the recipe. The recipe came from Taste….seriously, who needs a cookbook when you’ve got Taste?!! And it is super easy and so so so tasty.

Passionfruit Slice
1 cup self-raising flour
1 cup dessicated coconut
1/2 cup caster sugar
100g butter, melted
1 x 395g can sweetened condesnsed milk
1/2 cup fresh lemon juice
2 Tbs passionfruit pulp (I used 3 passionfruit, much more than the recipe calls for but good flavour)

Preheat oven to 180 degrees Celsius. Grease and line a slice tin.
Combine flour, coconut, sugar and butter in a large bowl. Mix to form a stiff dough. Press into prepared pan, using a metal spoon to press firmly down.
Bake for 12 minutes or until golden. Remove from oven and set aside to cool.
Reduce oven temperature to 150 degrees Celsius.
Whisk together the condensed milk, lemon juice and passionfruit pulp in a large bowl until smooth and well combined.
Pour into the pan and spread evenly over the base. Bake for 15 minutes until just firm to the touch. Set aside to cool completely. Cut into slices to serve.


(P.S. The blog has been a little quite of late…lots of things going on here though. School holidays, trips away and I have just come home from a youth convention for kids in our church aged 14-17 that I was heavily involved in organising. It was heaps of fun, but has been consuming my every thought for the last few weeks!!! I’m breathing a sigh of relief this morning with the kids back at school and no so much on my plate…hopefully life will quickly get back to normal again!)
