Make It Perfect

the quest for the perfect kiss biscuit…

i LOVE kiss biscuits…the kind you get from the old lady at the local market or thew homemade ones inthe glass jars at little bakeries.

but i have never made them myself, so tonight i thought i would have a go. the first hurdle was finding a recipe…couldn’t find any on the internet or in my cookbooks – until i resorted to the good old central cookery book! i thought would be the perfect place to find an old lady recipe!! they looked like they were going to turn out, but they just aren’t right and now i am sad! the biscuits are too soft and puffy and they just don’t taste as good as the old lady’s do.

so…this has started my quest for the perfect kiss biscuit – PLEASE if you have a good recipe or know someone who has a good recipe let me know! i am determined to make the perfect batch of kiss biscuits. leave me a comment or email me: tonicoward (at) aapt.net.au

Who is Cade?

Oscar has a hard time telling the difference between Cade, Andrew G (host of Australian Idol) and Jamie Oliver!!

Every time we watch Idol, he is amazed to see “Cade” on TV.

He is always looking through my cookbooks looking for “Cade”!!

Not a bad comparison Osc – must be the hair!

In the sun

A blissfully sunny day today. Lil joined Oscar and I outside while I hung the washing on the line. It was her first time hanging outside in the sun.

Oscar has started to call Lil “Bay-bay”, he sings it all day long – he also finds it amusing to try out his “wake up Jeff” shout when Lil is asleep to see if he can get a good reaction from her. Usually she sleeps through it, but when it does wake her up he thinks it is hilarious…I don’t!

Recipe Monday

Another one of my fabulous Tupperware recipes…

Simply Delicious Quiche
Pastry
200g cream cheese
125g cold butter
1-1 1/4 cups plain flour

Filling
1/2 cup grated cheese
1/4 cup chargrilled capsicum, sliced
6 fresh asparagus spears (or sliced zucchini)
Handful baby cherry tomatoes
200g shredded ham or bacon
3 spring onions, chopped
2 Tbs chopped parsley
2 Tbs plain flour
1 Tbs mayonnaise
5 large eggs
1 – 1/4 cups milk
Salt and pepper

Preheat oven to 220 degrees celcuis. Grease quiche dish.
Roughly chop cream cheese and place in microwave jug. Cover and microwave on medium/high for 2 minutes or until cream cheese is soft and warm.
Working quickly, grate the cold butter (I use margarine and dollop it in small spoonfuls) and add to the warm cream cheese. Quickly mix together.
Stir in 1 cup of flour and mix well. If dough feels too soft add remaining flour. Continue mixing until a dough is formed. Tip the dough into the greased dish and press out over the base and sides.
Place all the filling ingredients into a large bowl with a seal (Tuppeware of course!) and seal well. Shake until well combined. pour into the pastry case and season with freshly ground salt and pepper.
Place into oven and bake for 15 minutes. Reduce the temperature to 180 and bake for a further 30 minutes or until golden and firm.
Delicious served warm or cold.

**For a quick frittata, pour filling directly into dish without pasty and bake in 180 degree oven for 30 minutes.

**Filling Variations:

Thinly sliced salami, black olives and fresh torn basil leaves.

Pan fried potato cubes and sweet potato cubes, chopped red onion and pine nuts.

Chopped, cold BBQ chicken, canned corn, fresh chopped coriander and chilli.

Selection of fresh herbs and smoked salmon.

Sun dried tomatoes, marinated artichokes and olives.

…Brett and Kayla on your marriage last week. Wish we could have been there for it – what a beautiful couple! Bretty is like a brother to our family so I was very excited when wedding photos arrived in my inbox this morning.

…Eve and Chris on the birth of little Coda this morning. We are so excited for you and can’t wait to hear all about it and see some photos of your little angel!
