A few weeks ago Oscar and I were wandering around in Myer having a look at some things to buy and a lady from the Portrait Place in Myer came up to us and asked us if we had 15 minutes to spare and wanted to have a free photo shoot and walk away with an A4-sized photo for free. We have been conned by these “free photo shoot” things before where it isn’t really free and you end up getting sucked in and falling in love with photos and buying more than you bargained for, so I made sure that it was all totally free and she said that we could buy extra photos if we wanted to, but didn’t have to. So…off we went! It was fun, a good break for Oscar from sitting in the pram, he got to have a little play with some toys and I got to sit back and have a rest! I was kind of annoyed though because he had a mis-matched outfit on, but I got over it! Anyway, this is the photo we ended up with…I picked it up when we went to Launceston a couple of days ago.

We have had a nice quiet week so far this week. Just doing stuff at home and a little bit of shopping and going for a decent walk EVERY day (except when it was raining yesterday). It feels so good to go for a proper walk. And it lessens the amount of time that Oscar has to destroy the house and me to get frustrated with stuff everywhere! If I time it really well, we usually get back in time for Oscar to go straight to bed for a few hours and me to enjoy some peace and quiet and a house that hasn’t had a chance to get dirty yet!

Recipe Monday

I made this slice last week. It is similar to one they serve at the Raspberry Farm. Another one out of my Tupperware cookbook. (Yes, I use it alot!)

Raspberry-Studded Jam and Coconut Slice
100g butter
2c plain flour
1/2c caster sugar
1/2tsp vanilla essence
1 egg
1c apricot or raspberry jam

Coconut topping:
2c dessicated coconut
1/4c caster sugar
3 eggs
1/2 punnet fresh raspberries (I used frozen)

1. Preheat oven to 200 degrees celcius. Line slice tray with baking paper.
2. Melt butter in the microwave. Allow to cool slightly.
3. Sift the flour into a bowl and stir in the sugar. Using a spatula, slowly mix in the melted butter and vanilla until it looks like fine breadcrumbs. Stir in the egg and mix well. Knead until the dough is smooth.
4. Press into the base of the slice tray and bake for 10 mintutes or until lightly golden. Remove and set aside to cool. Reduce oven temperature to 160 degrees celcius.
5. Place the jam into the microwave, cover and microwave on medium for 2 minutes. Spread evenly over the base.
6. Combine the coconut, sugar and eggs in a bowl and arrange the mixture over the jam and press down gently.7. Bake for 10 minutes then remove from the oven and stud the top with raspberries. Return to the oven and bake for a further 10 minutes. Allow to cool before cutting into slices.

Chop Chop

Our little boy is getting big…last night he had is first haircut – pretty good effort – 19 months old and only just needing a trim! Most babies are born with more hair than Oscar has now!! Lucky we have our own barber on site, Jaron has never been to a hairdresser in his life. His Dad has always cut his hair and now he cuts his own so I don’t think we will ever be paying for Oscar to get a hair cut! Oscar was so cute, he was standing still and thought it was such a treat, espcially when the clippers tickled him! He only had to have a bit of fuzz trimmed around his ears and a little bit off at the back…so grown up!

A mothers day outing

Today Jaron and Oscar took me out for afternoon tea at the Raspberry Farm to celebrate Mothers Day tomorrow (we love going out to eat and will think of any excuse…) It was lovely, Jaron was spoiled with raspberry waffles while Oscar and I had scones with raspberry jam and double cream. Mmmmm. Oscar thought the jam was delicious!!
We took a little walk around the farm afterwards to try and get rid of some of the calories!!! My big preggas tummy – 29 weeks now and feeling it!
