I made this book the day before Lil was born for my Grandad for his 75th birthday. I was planning on posting it earlier, but baby came and I didn’t get around to it! My Mum and all of her brothers and sisters spent a few days in Adelaide with Grandad for his birthday so Mum took it over for me. The photos are from our family reunion in Adelaide in December 2005/January 2006.
Make It Perfect
BABY LAMINGTONS
These are a little messy to make, but worth it!
1 cup SR flour
1/4 cup cornflour
3/4 cup caster sugar
125g butter, softened
3 eggs
100ml milk
2 cups coconut
Chocolate Icing:
20g butter
2 cups pure icing sugar
1/4 cup cocoa
150ml milk
Preheat oven to 180 degrees celcuis. Grease slice tray.
Sift flour and cornflour into bowl. Add sugar and butter. Place eggs and milk into jug and whisk to combine. Pour into flour mixture and beat with electric beaters on a low setting to combine, then on high speed for 1 1/2 minutes.
Spread the mixture into the slice tray, pushing it into the corners. Bake for 30 minutes or until golden and firm. Stand for 5 minutes before turning onto a cake rack. Allow to cool completely.
Gently cut the cake 5 times evenly across the length and 3 times across the width to make 24 lamingtons.
Place coconut into a bowl and prepare the chocolate icing. Using tongs, dunk each square of cake into the icing to coat. Drain off any excess drips and place in the coconut, turn to coat. Place on wire rack to set.
Chocolate Icing:
Melt the butter in the microwave on medium for 30 seconds, then allow to cool.
Sift the icing sugar and cocoa into the melted butter, then stir in the milk. Cover and microwave on low for 1 minute. Stir until icing is smooth and glossy.
I am slowly getting used to the colour pink! It seems like all baby girl clothes are pink, pink and more pink. Yesterday Jaron, Oscar, Lil and I ventured out on our first outing…we were all sick of being housebound during the rainy week so we went to Launceston, had a quick look at the shops, got some lunch then went to the museum to show Oscar the trains and for Jaton to take photos for his final uni project.
Before Lil was born I thought it would be fun to try a bit of knitting during the winter months….there were LOTS of disasters (notice none of my projects made it to the blog??) – except this one…a little jumper and beanie made for Lil…isn’t is cute?
Oscar has been so cute with Lil. When I put her on the ground to have a kick a few days ago he got down next to her and giggled at every sound and movement she made. He thought it was fun to copy everything that she did, he especially loves it when she sneezes and always has a little laugh! Since Lil has been home Oscar looks soooo big! His body is all meaty and chunky and he seems so much older all of a sudden. He has been such a good boy, I couldn’t ask for an easier going new big brother in the family!


Day 5 already! Lil is going well, she is just doing the usual newborn stuff – feeding and sleeping and killing my boobs! I love that I can breastfeed, but hate the first few weeks…it was 10 weeks with Oscar until feeding wasn’t sore anymore, so for the moment I am dreading every feed but we will get through it! We have been spoiled by lovely friends dropping meals around, it is the best thing – the last thing I want to do at the end of the day is cook dinner.
Oscar has been really good with Lil. He loves to look at her and giver her little cuddles. Says “baby” and “sister” all the time. These photos are from when he came to see us at the hospital for the first time. He was really funny, when he and Jaron first walked into the hospital and he saw me sitting on the bed with the baby he hid behind a chair and looked at the ground and shook his head at everything we said to him…didn’t take long for him to warm up when he saw his Thomas the Tank Engine toy waiting for him though!
I stayed in the maternity ward of the Launceston hospital for one night and then was transfered to Deloraine hospital, which was really nice. Its a brand new hospital – all the rooms are big and you don’t have to share them with anyone and it is really quiet – no other crying babies keeping you awake through the night! It was good for Jaron and Oscar too as they didn’t have to drive as far to visit us and could just pop up whenever it suited them. I stayed there and had a great rest for the next 3 nights before coming home. Pop is also at the Deloraine Hospital at the moment so we could walk down to his room for a little visit.
It is nice to be home in my own bed and surroundings though – and I got 5 hours of straight sleep last night – keep it up little girl!!!
