Horray – she has finally arrived! Meet our newest little addition to the Coward family Lil Toni…
We are so blessed to have her in our lives after much waiting and many false alarms! She was born on Friday 3rd August at 10:12am. Weighed 7 pounds, 9 ounces and was 49cm long. My labour was quite good – very short which was nice! I was having contractions at home for about 2 hours before leaving for the hospital. By the time we arrived at the hospital Lil was born 2 1/2 hours later. We were expecting to be hanging around all day waiting for it to happen, but thankfully that was not the case!
I have had a lovely rest in hospital for the last 4 days, and came home this morning. It is nice to be home, but tiring, so will catch up on the blogging with more info in the next few days! Some photos of Lil being weighed, and with her proud and happy Mum and Dad…

The great line up!

The way that Oscar is playing with his toys and things around him is really starting to change. He is starting to order things and put them into groups. Last night as I was doing the dishes, I turned around to find him lining up cups, bowls and plates. It might sound like nothing exciting to you, but he has never done anything like this before, so of course Jaron and I were very proud of our clever little boy!

I am sick of scrapbooking 12×12 pages – they are so big and the albums are difficult to store…so I decided to take the plunge and try my hand at some 8.5×11 pages. It is similar to an A4 size and so much quicker and easier to finish. Here are my attempts so far:

Nan and Pop

My cousin Lisa has been working SOOO hard over the past few months scanning and collecting thousands of photos of my Nan and Pop Triffitt so that she can put them together on DVDs for all of the family to have as a memoir of our grandparents. She has made her first video clip…thought you might be interested in seeing it if you know my grandparents. You can view it it here. Thanks Lisa for doing what the rest of us talk about doing but never actually did! xxx

Recipe Monday

My awesome friend Sarah Parsons made these delicious burgers for me when I was at her house for dinner once. They have since become a favourite in our family – I love them because they are scrummy, cheap and quick to prepare.

BEAN BURGERS

425g can cannelini beans
oil spray
1 onion, finely chopped
2 cloves garlic, crushed
1 green chilli, seeded and finely chopped
1tsp cumin
1 zuccini, grated
1 carrot, grated
1c fresh wholemeal breadcrumbs (approx)
2tsp oil

Mash beans in a bowl with a fork.
Heat oil spray in a pan.
Add onion, garlic and chilli, cook for 3 minutes. Stir in cumin.
Add onion mixture, carrot, zuccini and breadcrumbs to beans. Mix well with hands. Add more breadcrumbs if needed.
Form into 4 balls. Flatten into 10cm rounds. Cover and chill in fridge for at least 20 minutes.
Heat oil in pan. Cook burgers over medium heat for 2-3 minutes on each side until browned and warmed through.
Serve on turkish bread with cheese, lettuce, tomato and sweet chilli sauce.
