A new bag

I made myself a new nappy bag this afternoon while Oscar had a nap. I feel very productive getting it started and finished in one sitting. Hmmm…I don’t really NEED it, but its nice to have variety!

Recipe Monday

Our very very very favourite soup. I love it because it is so quick and easy to make and I always seem to have all of the ingredients on hand.

ZUCCHINI AND POTATO SOUP
30g butter
1 medium onion, chopped
1t mustard
2 medium zucchini, chopped
4 medium potatoes, chopped
2 chicken stock cubes
2c water
1/4c fresh grated parmesan cheese
½c sour cream
1/4c bacon pieces, fried

Melt butter in large saucepan, add onion and mustard. Cook until soft.
Add zucchini and potatoes. Cook for 5 minutes.
Add stock cubes and water. Bring to the boil, simmer for 20 minutes or until potatoes are soft.
Blend soup together until smooth.
Return to pan and stir in parmesan cheese, sour cream and bacon.

Its over!

For first semester anyway…Jaron had his last interview at uni yesterday – he did really well. It is such a relief, we are looking forward to some nice holidays together now, he is still working but at least when he is home he won’t have to be doing his uni work.

Oscar and I went to Launceston with Jaron yesterday when he had his interview and did some shopping, then we went our for lunch – yummy fish and chips – at Seaport. We are having some lovely sunny winter days at the moment so it is nice to make the most of being able to go outdoors.
